Paleo Recipes

In my quest to go Paleo, a few people have asked me to post any great recipes that I've found.  So here they are!  I'm only posting the AMAZING and reealllllllly good ones. You'll notice after awhile that most of these come from the same sites over and over.  But they seriously have a million recipes that I want to try!

Beef

Chili (The Clothes Make the Girl)
- Really enjoyed this!  Let it simmer for the full 2 hours and it had great flavor.

Cinnamon Chipotle Sliders (PaleOMG)
- Next time will use less coconut oil and don't cook them as much! But SO good!  Paired w/avocado and sweet potato chips.

Coffee Marinated Steak Fajitas (PaleOMG)
- Totally enjoyed this!  Used extra lime and it was perfect.  And yummy cold the next day.

Creamy Roasted Red Pepper Pasta & London Broil (PaleOMG)
- Fairly easy to make and tasted just like cream sauce.  Next time I'll add crushed red pepper flakes to the sauce for an extra kick.  Just used 3 large zucchini and no other squash.

Crockpot Ropa Vieja w/Cuban 'Rice' (PaleOMG)
- Used a Bottom Round cut of beef since that's all Whole Foods had and it came out pretty good.  It had some great flavor but didn't remind me much of ropa vieja.  Was more of a stew kinda.  Cuban 'Rice' was also really good...but you put bacon in anything it's awesome, right?

Curry Meatballs (PaleOMG)
- Used bison instead, and only 1 can of coconut milk.  Really easy.  Not my favorite but will make again.

Fire Roasted Bacon Meatloaf (Civilized Caveman Cooking)
- Seriously one of the BEST meatloafs I've ever had!  Meatloaf wasn't dry at all and had great flavor.  I added an extra heaping Tbs of almond flour to keep it together.  Also broiled it towards the end to get it crispy on the outside.  YUMMMMM!

Italian Meatloaf (PaleOMG)
- Really good!  I also had to add oregano into the meatloaf and the sauce b/c that's what a good Italian/Greek girl does.  It can't be called Italian without it, IMO.

Stuffed Zucchini (Everyday Paleo)
- I'm not a fan of mushrooms so I omitted them but then the mixture needed something.  I threw in a little bit of marinara sauce to give it a little more substance and it was really good!  I used dried rosemary and probably should have used fresh.



Chicken

Almond Strawberry Stuffed Chicken Breast (Civilized Caveman Cooking)
- I didn't have spinach b/c I didn't want to buy a whole bag for just a few days.  Cut the recipe in half and I still had SOOO much stuffing.  After rolling some stuffing in the chicken, I skipped pan searing it and just popped it into the oven, pouring the extra stuffing around the chicken.  I love cinnamon so doused the chicken and stuffing in it.  It was a great combination of flavors and I loved the crunch of the almonds!

Bacon Wrapped Tahini and Sun Dried Tomato Stuffed Chicken Breasts (Civilized Caveman Cooking)
- I really enjoyed these!  I think I used slightly too much tahini the first time so will cut back next time. Also added raw diced onions with the sundried tomatoes to add more flavor.

Balsamic Grilled Chicken w/Sundried Tomatoes (Civilized Caveman Cooking)
- SO good and SO easy to make!  Since we're not allowed to have grills (stupid condo rules!), I just threw this in an pan with some sliced up zucchini and put it in the oven.  30 mins later, voila!  Didn't specifically measure the liquids but it was delicious.

Chicken Coconut Curry Noodle Bowl (PaleOMG)
- Used 3 cups kale, chicken broth instead of vegetable, no coconut cream concentrate (didnt have any), no fish sauce (just added more coconut aminos), plus threw in a small can of water chestnuts for a little crunch. Awesome!

Chicken Cutlets w/Olives & Tomatoes (PaleoPlan)
- I used kalamata olives which are iffy on the plan but I've seen them in a ton of recipes

Chicken Mole (Everyday Paleo)
- I'm not sure I'd call this a traditional mole like any of the others I've had but I totally enjoyed every bite of this.  I think next time I'll add more chocolate and maybe some peppers in adobo sauce for more heat and smokey flavor.

Date & Shallot Rosemary Chicken (PaleOMG)
- YUMMY!  And SO easy to make! 

Pistachio Pesto Chicken Pasta (PaleOMG)
- Thoroughly enjoyed this!  Definitely use the full cup of oil.  I only used 1/2 cup and it was slightly too thick when I put it all together.  Also sprinkled with a little grated parmesan cheese.



Pork


Apple Bacon Rosemary Pork Burgers (PaleOMG)
- Easy and tasty!  I used 5 slices of bacon instead of 6-8 and it still was delicious.  Out of a little over a pound of meat I was able to get 4 normal sized burgers out of it.  Might use sage instead next time to change it up.

Fig & Rosemary Pork (Meals and Miles)
- OMG I loved this!  Followed the recipe exactly (but used dried rosemary instead) and then also added between 1/4 and 1/2 cup of balsamic vinegar with the chicken broth.  The fig sauce was delicious and I could eat it by itself with a spoon!




Side Dishes

Lemon Brussel Sprouts (Civilized Caveman Cooking)
- So good!  I'm usually not a major brussel sprout fan since I think they can be bitter.  Since these are cut so fine, it helps them cook thoroughly and they weren't bitter at all!  If you don't LOVE lemon though, use less lemon.  I can never have too much so this was perfect!

Lemon Cucumber Noodles w/Cumin (Civilized Caveman Cooking)
- So easy and refreshing!  Finally bought a julienne peeler and it works wonders, I love it.  Have also used curry powder instead of cumin and it was delicious.

Oven Roasted Tomatoes (NomNom Paleo)
- Aaaaaamazing!  Used grape tomatoes instead and only sprinkled with salt, pepper, basil, and olive oil.    More addicting than chips.




Desserts & Baked Goods

Blueberry Banana Brownies (Civilized Caveman Cooking)
- These were delicious!  The banana and blueberries gave these a great flavor, but you don't even need the blueberries.

Cinnamon Swirl Banana Cake (Civilized Caveman Cooking)
- LOVED!  Didn't candy the walnuts and it still tasted really good.  Definitely a cake consistency and not like banana bread too much.

Cranberry Ginger Cookies (Civilized Caveman Cooking)
- These tasted great.  Slightly burned the bottoms though so need to attempt these again and watch how long I keep them in there!

Flourless Tahini Cookies  (La Cucina di Kait)
- I used 2 Tbs of cocoa powder and topped half of them with chopped walnuts.  They're cakey in texture and I really enjoy them!  They're messy though, they don't look anything like the pic.  My dough was like peanut butter so I just spoon dropped the dough onto the cookie sheet and thats how I left them.

Simple Blueberry Muffins (PaleOMG)
- I thought there was a lot of almond butter in them when I saw the recipe so next time I think I'm going to cut it in half and replace it with some applesauce or something.  They were also a little oily so maybe I won't use as much coconut oil.  But I totally liked these!

Zucchini Almond Butter Muffins (Carrots 'n' Cake)
- I was browsing all the blogs in my reader one night and when I got to this post by Tina, I realized I had all the ingredients already in my house.  So at 9:30pm, I turned on the oven and made these babies. Like Tina said in her post, the muffins aren't sweet, just VERY slightly do you taste the honey, and they're hearty/dense.  But they tasted great!  I actually was only able to eat about 3 of these on my own...the other 6 mysteriously disappeared.  And this pic reminds me that I need to buy muffin cups....



Other Awesome Paleo Products
Along the way of finding Paleo items, I'll list the ones that I'm in love with here.

 Sophia's Survival Foods Grass Fed Jerky Chews
- This jerky is AMAZING!  Especially the spicy.  No soy, no gluten, no sugar.  Just all natural ingredients.  In LOVE.

  1. Thank you for sharing these paleo recipes. I'm into collecting more recipes and I'm new on Paleo. So your sharing help me to get more Paleo recipes and definitely I'll try them. Pistachio Pesto Chicken Pasta seems delicous, can't wait to try it!

  3. These Paleo recipes you've mentioned are definitely delicious. Regarding your Cinnamon Chipotle Sliders, thank you for sharing another tips. I'll try to use lesser coconut oil as well and pair it with avocado.
