I've been on a cooking rampage since the last time I posted about my Paleo cooking adventures. And starting this month, my friends and I at CrossFit are kicking our own butts and getting pretty strict again... minus that Reeses's peanut butter egg I just swiped from work. Oops. :)
So here's a few more faves from the past month or so:
5 Spice Slow Cooker Pork Ribs (The Clothes Make the Girl)
- Easy! Used St. Louis Pork Ribs, broiled them on each side for a few mins at the very end. Slow cooked on low for 10 hours.
Almond Cookies with Cinnamon Glaze (Civilized Caveman)
- easy to make, usually have all the ingredients, and tasty! Will add more sweetener next time to the actual cookie, or double the glaze recipe.
Bacon and Grapes Brussel Sprouts (Meals and Miles)
- OMG SO GOOD! I could eat the entire bowl in one sitting! Honestly nothing else to say about these babies, GO MAKE THEM!
Beyond Easy Pulled Pork (Everyday Paleo)
- only cooked it on low at the end for about an hour b/c was running out of time. SO good and delicious Easy to make and I always have the ingredients on hand.
Cajun Mini Meatloaf (paleOMG)
- Umm... I love these little babies. For real. Yeah, they're spicy but they're perfect. I took the andouille out of the casing when mixing it into the beef. Didn't use as much chili powder in the sauce but could have. Will def make these again.
Fall's Best Pumpkin Muffins (The Prime Pursuit)
- Easy and yummy!
Paleo Banana Bread (Civilized Caveman Cooking)
- Hands down, by far the best Paleo treat I've made, and there isn't even any added sugar! AMAZING banana bread. I've made this a few times now (not sure why I never posted it here) and each time it gets better. Used parchment paper in the pan b/c the first time it stuck. I've used both unripe and ripe bananas and it's great both times, I like it better with overly ripe though, a little sweeter. After people have tried this, they keep asking me to bake them more. So it's a staple at any CrossFit event we go to.

Yay!!! Thanks for all the recipe ideas!! The Brussels sprouts with grapes sounds interesting! I might just have to try it!
